Oatmeal Breakfast Bites

Preheat oven to 350 F

In stand mixer or food processor cream:

2 over-ripe mashed medium bananas

1 tsp pure vanilla extract

1Tbsp coconut oil or ghee

Mix in:

2 ½ cups organic rolled oats

½ cup organic shredded coconut

1+ tsp cinnamon

1/2 tsp sea salt

Stir in:

1 cup organic dried fruit or organic fresh fruit

Fill 12 lined regular cupcake tins or 6 large cupcake tins to the top. They will no rot rise like a muffin.

Bake 20 minutes.

Eaten right away, store in fridge or freeze and reheated.
